This bruschetta recipe adds a tasty twist to the original.


  • on the vine tomatoes, chopped
  • bread
  • goat’s cheese, sliced into rounds
  • basil
  • parsley
  • olive oil
  • garlic
  • salt
  • pepper


Preheat the oven to 150 degrees and toast the bread slightly. Combine the tomato, herbs, seasoning and olive oil in a bowl.

Rub garlic in to each slice of toast. Place a few rounds of goats cheese onto each slice and heat for a few more minutes until the cheese starts to melt. Remove from the oven and place the tomato mix over each piece of bread to serve.
