A yummy, creamy vegetable bake I threw together tonight for dinner.


  • 1 onion
  • 1 large potato
  • ham, sliced (leave out for vege option)
  • camembert
  • garlic, crushed
  • 1 courgette
  • 10 mushrooms
  • 6 teaspoons pesto
  • mozzarella, grated
  • salt and pepper
  • mixed herbs
  • bread crumbs


Preheat oven to 190 degrees. Slice vegetables. Fry onion and garlic in a large wok until browned. Add potato and courgette and fry gently. Season with herbs, salt and pepper. Grease an oven dish. Layer vegetables (including mushrooms), ham and slices of camembert in the dish. Place dollops of pesto over the dish – these will melt down into the dish as it bakes. Sprinkle with cheese and bread crumbs. Bake for 1 hour. Spoon the liquid over the bake when it’s served and accompany with a green salad.
