An easy soup I made tonight in my slow cooker as part of my 30 days of paleo detoxing.

INGREDIENTS

Choose organic where available.

  • 1 spring onion
  • 2 carrots
  • 1 leek
  • 1 sweet potato
  • 2 small peppers
  • 1 tin diced tomatoes
  • 1 teaspoon hot paprika
  • 1/2 teaspoon cayenne pepper
  • salt
  • pepper
  • herbs
  • 1 teaspoon umeboshi puree or home-made stock

METHOD

Chop up all the veg and throw it in the slower cooker. Add the tinned tomatoes, seasoning, umeboshi (or stock) and top up with boiling water. Set to low and allow to cook overnight.
