Onion and tomato scrambled eggs

Roast chicken and veges, green beans and paleo gravy. I also roasted some pumpkin seeds with spices and salt.
Dinner
Thai red fish curry.

Day 27
Breakfast
Tomato concasse with onion, cherry tomatoes, chillies, some home-made chicken stock and 2 eggs (sunny side up). I made enough for two days and will bring the rest to work with me.
Lunch
Left over roast chicken, vegetables and steamed green beans with lemon juice and garlic.
Dinner
Defrosted Thai red fish curry
Snacks
Roasted, spicy pumpkin seeds

Day 28
Breakfast
After yoga I had a mixed berry smoothie from??
Shakshuka with onion, cherry tomatoes, chillies, some home-made chicken stock and 2 eggs (sunny side up). Ok. I cheated and made a double batch yesterday, then took this to work. I served this on top of left-over roast veges and it made a large, tasty breakfast.

Left over chicken and vegetable soup – made using my home made chicken stock – Yum!
Snacks
1 banana
1 tangerine

Left over roast chicken with veges, paleo gravy and home-made pesto mustard.
Dessert
An almond milk tea with 2 Nakd bars
Day 29
Breakfast
2 boiled eggs
Lunch
A large mixed salad with cos lettuce, grated carrot, radishes and spring onions dressed with a Coconut blossom extract, lemon juice and olive oil dressing.
Snacks
Tonight I made some paleo porridge ready to eat in the morning. I brought 3/4 cup of almond milk to the boil, then quickly mixed in 3/4 cup of almond meal with 1 1/4 cups of desiccated coconut, 1 teaspoon of cinnamon 1/2 teaspoon of ginger and 1/2 teaspoon of nutmeg. After turning off the heat I added chopped dried apricots and a dried fruit mix. Tomorrow I will add 1 or 2 bananas to add a bit more sweetness. I wish I’d learnt how to make this earlier. It’s a nice, easy, filling start to the day.
I also pre-made a blueberry smoothie with Almond milk, but it’s not quite as good without the banana.
Dinner
I went out at a fish restaurant with a friend tonight for dinner.
Day 30
The final day is finally here!
Breakfast

A large mixed salad I made up yesterday with cos lettuce, grated carrot, radishes, avocado and spring onions, topped with the last of the left over roast chicken. dressed with a Coconut blossom extract, lemon juice and olive oil dressing.
Snacks
The rest of the vegetable and chicken soup.
