green saladSomething I threw together for lunch today.

INGREDIENTS

  • gem lettuce
  • radishes, quartered
  • tomato, cubed
  • avocado, sliced
  • green beans, halved
  • pine nuts
  • fresh herbs (or dried)
  • salt and pepper

dressing

  • white wine vinegar
  • dijon mustard
  • garlic, crushed
  • Maggi liquid seasoning (optional)
  • olive oil

METHOD

Wash and dry the gem lettuce and line the bowl with the leaves. Steam the green beans until just cooked – they should still be a bit crunchy. I cooked them in [amazon_link id=”B005D6Y16K” target=”_blank” container=”” container_class=”” ]my microwave steamer[/amazon_link] for about 1 minute. Top the lettuce with the avocado, tomato, radishes and green beans. Sprinkle with pine nuts, herbs and salt and pepper.

Mix together the dressing ingredients except for the oil until well combined. Slowly pour in the olive oil while continuing to stir. Pour over the salad and serve.

For a paleo dressing leave out the Maggi seasoning and use paleo mustard.
