An easy side dish or healthy lunch. Similar to my other lentil salad recipe, except I cheat with this one and use tinned lentils, so there’s no cooking required.


  • 1 tin green lentil
  • 1 small onion
  • parsley
  • 1 tomato (optional)
  • 1/2 lemon
  • olive oil
  • salt and pepper


Drain the lentils, dice the onion, juice the lemon and finely chop the parsley. If using tomato, dice this as well. Throw it all together, adding the oil in last.
