These paleo treats are easy to make, healthy and delicious.
INGREDIENTS
- 1 x 150g punnet blueberries (would probably work with other berries too, but you may need more flour)
- 100g desiccated coconut
- 2 tablespoons coconut flour
- 100g almond flakes or meal
- 50g sesame seeds
- 100g sultanas and/or raisins
- 1 teaspoon vanilla essence
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- a pinch or two of chilli powder (optional)
METHOD
If using almond flakes, grind these into almond meal using a blender (a hand held one works fine, but you’ll need to put a tea towel or similar on top to stop the flakes flying out the top of the container). Add the blueberries and blend until mushy. Add the sultanas, raisins and sesame seeds and blend again until combined. Add the vanilla essence, spices and the coconut flour and mix with a table spoon. Place the mixture in the fridge for half an hour or so until it becomes firmer. Place the desiccated coconut in a small bowl. Using a table spoon, scoop out some mixture into your hand and roll into small balls, then roll these in the coconut flour. These are now ready to serve, or can be stored in the fridge.
