A healthy, paleo snack that tastes even better than regular french fries.

INGREDIENTS

  • 2 sweet potatoes
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • salt
  • pepper
  • coconut oil or olive oil

Preheat the oven to 180 degrees (or 160 degrees for a fan forced oven). Peel and cut the sweet potatoes into large chunky fries of about the same size each. Remember they will shrink a bit during cooking so cut them a bit larger than the fries you will end up with. Mix all the spices together in a small bowl. Place the sweet potato in a large mixing bowl and sprinkle the spices over the top and toss to coat. Line a baking tray with aluminium foil and place the fries (one by one) on the tray leaving space between each one and placing the smaller fries to the outside where the oven will be less hot. Bake for 20 minutes, then remove the tray from the oven and turn each piece over to allow the opposite side to cook. Bake for another 15-20 minutes until the fries are crispy. Serve with seeded mustard mayonnaise or your favourite accompaniment.
