Another easy salmon recipe. Good served with mash and wilted spinach.
INGREDIENTS
- salmon
- lemon, juiced and rind grated
- parmesan cheese, grated
- bread crumbs
- salt
- pepper
- mixed herbs (or chopped parsley)
METHOD
Preheat oven to 180 degrees. Mix together lemon juice, lemon rind, parmesan cheese and breadcrumbs and season with salt, pepper and mixed herbs. Press the crust into the top of the salmon and bake for 15-20 minutes. Serve with mashed potato and wilted spinach.
