Easy and delicious cottage pie
INGREDIENTS
- olive oil
- 1 carrot, diced
- 1 onion, sliced
- 1 courgette / zucchini, diced
- 1 cup frozen peas
- 500g mince or quorn
- 2 tablespoons tomato paste (or tomato sauce if you have this instead)
- 1 tin tomatoes
- Worcestershire sauce
- 500ml beef stock
- mixed herbs
- chilli
- paprika
- salt and pepper
Mash
- new potatoes, skin on
- butter
- milk
METHOD
Preheat oven to 180 degrees. Fry the onion and carrot until browned and softened. Add the courgette. Lower heat and keep on the heat while you cook the meat in a little oil in a separate, large pot. Once the meat is cooked add the vegetables. Mix in the stock, tomatoes, tomato paste, chilli, herbs and spices. Cook for around anther 1/2 hour while you cook the potatoes. Once the potatoes are soft, mash with a little butter and milk. Season the meat mix with salt and pepper and pour out into a greased baking tray. Add the mash on top. Bake for 20 minutes or until the top is golden. Serve with a side salad.
