A simple, healthy meal that makes a good lunch time meal for work.
INGREDIENTS
- 1 tin chickpeas
- 1 cucumber, diced
- 1 red onion, diced
- 1/4 block fetta cheese, cubed
- lemon juice
- olive oil
- oregano or other herbs
- salt and pepper
METHOD
Combine dressing ingredients in a bowl and season to taste with salt and pepper. Add drained chickpeas, cucumber and onion. Sprinkle fetta on top and serve.
