Yum! I love these vege patties with a full English breakfast or on their own with a bit of tomato or HP sauce. A great way to use up left over veges.
INGREDIENTS
- 1 onion, chopped
- potato, mashed
- green peas, cooked
- other left-over veg (carrots, courgette, brussel sprouts – anything really)
- left over meat (optional)
- olive oil and butter
- flour
- 1 egg
- salt and pepper
METHOD
Fry the onion in olive oil and butter. Mix together mash, veg, meat, peas and season with salt and pepper. Add the onion. If the mixture isn’t holding together very well, beat an egg a little and add this to the mix. Form into balls and coat in flour. Fry in a good amount of butter and oil – squash flat to form a pattie. Add more oil if you need it. Serve with an English breakfast or on it’s own with red or brown sauce. Yum!
