One of my favourites…

INGREDIENTS

  • 400g pasta
  • 1 tin tomatoes
  • 2 eschallots
  • garlic
  • Basil leaves
  • 1/2 teaspoon vegetable stock
  • salt
  • pepper

METHOD

Fry up garlic and eschallots. Add tinned tomatoes, vegetable stock and basil leaves. Season with salt and pepper and serve with pasta.
