A good way to use up left over steamed green beans after dinner for tomorrow’s lunch.

INGREDIENTS

  • green beans
  • red onion, diced
  • parsley, chopped
  • lemon juice
  • olive oil
  • garlic, crushed
  • salt and pepper

METHOD

Steam green beans. Mix together all ingredients in a bowl and season with salt and pepper. Let the salad marinate for a few hours.
