One of my all time favourites…

INGREDIENTS

  • 2 salmon steaks
  • salt and pepper
  • 1 lemon, half sliced & half in wedges
  • white wine (optional)
  • 1 large potato
  • baby spinach
  • milk
  • butter
  • garlic, crushed

METHOD

Preheat oven to 180 degrees. Boil water. Place each salmon on alfoil and season with salt and pepper. Place sliced lemon on top and optionally add a splash of white wine. Fold the alfoil over so it is sealed. Bake in the oven for 20 minutes. Cook the potatoes and when ready mash with milk and butter. Five minutes before serving, steam the baby spinach and mix in butter and crushed garlic. Serve the mash, wilted spinach and salmon with lemon wedges on the side.
