{"id":82,"date":"2008-09-23T10:32:37","date_gmt":"2008-09-23T00:32:37","guid":{"rendered":"http:\/\/www.jessgramp.com.au\/wordpress\/?p=82"},"modified":"2023-02-09T00:34:59","modified_gmt":"2023-02-09T00:34:59","slug":"gujarati-potatoes","status":"publish","type":"post","link":"https:\/\/jessgramp.com\/recipes\/gujarati-potatoes\/","title":{"rendered":"Gujarati potatoes"},"content":{"rendered":"<p>This is yet another recipe from the <a title=\"Opens in new window\" href=\"http:\/\/www.sbs.com.au\/food\/recipe\/39\/Gujarati-potatoes\">SBS Food Safari<\/a>.<\/p>\n<p><!--more--><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>400g pontiac potatoes, peeled, cooked then cubed<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>1 tsp ground coriander<\/li>\n<li>1 tsp turmeric<\/li>\n<li>\u00bd tsp chilli powder<\/li>\n<li>Salt, to taste<\/li>\n<li>2 tbsp vegetable oil<\/li>\n<li>1 tsp mustard seeds<\/li>\n<li>1 tsp cumin seeds<\/li>\n<li>5 &#8211; 6 fenugreek seeds<\/li>\n<li>1 tbsp desiccated coconut<\/li>\n<li>2 tsp sesame seeds<\/li>\n<li>3 &#8211; 4 sprigs fresh coriander, chopped<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<p>In a bowl combine the cooked potato, cumin, coriander, turmeric and chilli. Season with salt. Toss to evenly coat potatoes with the spices.<\/p>\n<p>In a heavy based pan or kadhai, heat the oil and add mustard, cumin and fenugreek seeds and cook until sizzling.<\/p>\n<p>Add spiced potato to the tempered oil. Stir gently to coat potatoes. Add desiccated coconut, sesame seeds and fresh coriander.
