I made up this recipe with the food I have left over for breakfast and it was pretty good, so here it is for you to enjoy as well.<\/p>\n<p><!--more--><\/p>\n<p>INGREDIENTS<\/p>\n<ul>\n<li>butter<\/li>\n<li>spring onions<\/li>\n<li>salt and pepper<\/li>\n<li>2 tablespoons\u00a0pesto<\/li>\n<li>2 eggs<\/li>\n<li>spinach leaves<\/li>\n<li>mushrooms, sliced<\/li>\n<li>cherry tomatoes, halved<\/li>\n<li>chillies (optional)<\/li>\n<\/ul>\n<p>METHOD<\/p>\n<p>Fry the onions in the butter then add the mushrooms, tomatoes and chillies if you&#8217;re using them. Stir in the pesto and spinach leave, then make wells in the mixture and\u00a0crack in the eggs.
