{"id":74,"date":"2008-09-15T20:03:40","date_gmt":"2008-09-15T10:03:40","guid":{"rendered":"http:\/\/www.jessgramp.com.au\/wordpress\/?p=74"},"modified":"2023-02-09T00:34:59","modified_gmt":"2023-02-09T00:34:59","slug":"74","status":"publish","type":"post","link":"https:\/\/jessgramp.com\/recipes\/74\/","title":{"rendered":"Coconut and Passionfruit Self-Saucing Pudding"},"content":{"rendered":"<p>Serve this delicious dessert from <a title=\"opens in a new window\" href=\"http:\/\/www.taste.com.au\/recipes\/640\/coconut+and+passionfruit+self+saucing+pudding\">taste.com.au<\/a> with vanilla custard.<\/p>\n<p><!--more--><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 cup self-raising flour<\/li>\n<li>1\/2 cup caster sugar<\/li>\n<li>1\/2 cup desiccated coconut<\/li>\n<li>2\/3 cup light coconut milk<\/li>\n<li>1 egg<\/li>\n<li>80g butter, melted, cooled<\/li>\n<li>pure icing sugar, to serve<\/li>\n<li> Sauce<\/li>\n<li>1\/2 cup caster sugar<\/li>\n<li>3 teaspoons cornflour<\/li>\n<li>1\/2 cup milk<\/li>\n<li>2 small lemons, juiced<\/li>\n<li>3 passionfruit, halved<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<ol>\n<li>Preheat oven to 180\u00b0C. Grease a 6-cup capacity, 5.5cm-deep, 19cm x 25cm (base) ovenproof dish and place on a baking tray lined with baking paper.<\/li>\n<li>Sift flour into a bowl. Stir in sugar and coconut. Whisk coconut milk, egg and butter together in a jug. Pour into flour mixture. Gently stir until combined. Spoon into prepared dish. Smooth surface.<\/li>\n<li>Make sauce: Combine sugar and cornflour in a bowl. Sprinkle over pudding. Combine milk and 1\/3 cup lemon juice (don&#8217;t worry if mixture curdles) in a small saucepan. Cook, stirring, over medium heat until mixture comes to the boil. Remove from heat and stir in passionfruit pulp. Pour hot lemon mixture over the back of a large metal spoon, over pudding.<\/li>\n<li>Bake for 40 to 45 minutes or until a skewer inserted halfway into pudding comes out clean.
