{"id":67,"date":"2008-08-26T22:23:38","date_gmt":"2008-08-26T12:23:38","guid":{"rendered":"http:\/\/www.jessgramp.com.au\/wordpress\/?p=67"},"modified":"2023-02-09T00:34:59","modified_gmt":"2023-02-09T00:34:59","slug":"chilli-lamb-with-cashews","status":"publish","type":"post","link":"https:\/\/jessgramp.com\/recipes\/chilli-lamb-with-cashews\/","title":{"rendered":"Chilli Lamb with cashews"},"content":{"rendered":"<p>Another recipe from the Johnson cookbook which I&#8217;m sure to like: chilli and cashews, yum!<\/p>\n<p><!--more--><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>750g lamb fillets, sliced across the grain into thin sliced<\/li>\n<li>1 large onion, chopped<\/li>\n<li>2 tablespoons chilli sauce<\/li>\n<li>4 tablespoons peanut oil<\/li>\n<li>200 grams snow peas<\/li>\n<li>230 grams tinned bamboo shoots, drained and sliced<\/li>\n<li>1 cup cashews<\/li>\n<li>1 tablespoons soy sauce<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<p>Heat 2 tablespoons oil in wok. Once hot, brown meat in batches (but don&#8217;t cook through). Remove from wok and drain on absorbent paper. Wipe out wok with absorbent paper. Add 1 tablespoon oil to pan and fry cashews until golden brown. Remove from wok with slotted spoon and drain on absorbent paper.<\/p>\n<p>Heat 1 tablesppon oil in wok, swirling gently to coat sides. Add onion and snow peas. Stir fry over medium heat for 2 minutes. Add bamboo shoots. Stir fry 1 minute. Return meat to wok with cashews, chili and soy sauce.
