Great for a cold day.<\/p>\n<p><!--more--><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>400g mixed beans, tinned or soaked overnight and boiled for an hour<\/li>\n<li>olive oil<\/li>\n<li>garlic<\/li>\n<li>eschallots<\/li>\n<li>parsley, chopped<\/li>\n<li>basil, chopped<\/li>\n<li>1 tablespoon tomato paste<\/li>\n<li>400g tomatoes, diced<\/li>\n<li>3 sticks celery<\/li>\n<li>2 carrots<\/li>\n<li>2 potatoes<\/li>\n<li>2 litres chicken stock<\/li>\n<li>1 cup small pasta<\/li>\n<li>parmesan<\/li>\n<li>extra parlsey<\/li>\n<li>salt<\/li>\n<li>pepper<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<ol>\n<li>Fry garlic, eschallots, parsley and basil. Add tomato paste and cook for a few minutes. Add vegetables and stock.<\/li>\n<li>Bring to the boil and then reduce heat and simmer for 1 hour, or until the vegetables are tender. Add macaroni and cook for 10 minutes further.<\/li>\n<li>Season to taste with salt, pepper, parsley and parmesan.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Minstrone soup from the Women&#8217;s Weekly Original Cookbook.
