{"id":56,"date":"2008-08-11T20:42:32","date_gmt":"2008-08-11T10:42:32","guid":{"rendered":"http:\/\/www.jessgramp.com.au\/wordpress\/?p=56"},"modified":"2023-02-09T00:34:59","modified_gmt":"2023-02-09T00:34:59","slug":"orange-lemon-poppyseed-muffins","status":"publish","type":"post","link":"https:\/\/jessgramp.com\/recipes\/orange-lemon-poppyseed-muffins\/","title":{"rendered":"Orange \/ lemon poppyseed muffins"},"content":{"rendered":"<p>Quick and easy to prepare muffins.<\/p>\n<p><!--more--><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2\u00bd cups self-raising flour<\/li>\n<li>\u00be cup caster sugar<\/li>\n<li>5 tablespoons poppyseeds (you can use more or less depending how much you like them \ud83d\ude42<\/li>\n<li>2 tablespoons butter, melted<\/li>\n<li>1 cup milk<\/li>\n<li> \u00bd cup orange juice or lemon juice with water<\/li>\n<li>2 tablespoons orange rind, finely grated<\/li>\n<li>1 egg, whisked briefly<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<ol>\n<li>Preheat oven to 180 degrees and grease a 12 hole muffin tray &#8211; don&#8217;t forget to grease the top and the muffins will expand over the lip of the holes.<\/li>\n<li>Combine dry ingredients. Whisk together wet ingredients and add to dry ingredients. Stir until just combined &#8211; don&#8217;t mix too much.<\/li>\n<li>Spoon mixture into muffin tin and bake for 20-25 minutes.<\/li>\n<li>After 20 minutes check a muffin with a skewer.
