This soup uses curry flavours in place of the the usual creaminess.<\/p>\n<p><!--more--><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>onion, diced<\/li>\n<li>pumpkin, chopped (skin removed)<\/li>\n<li>1 or 2 potatoes, chopped<\/li>\n<li>salt and pepper<\/li>\n<li>curry powder<\/li>\n<li>cumin<\/li>\n<li>nutmeg<\/li>\n<li>chicken or vegetable stock<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<p>Fry onion. Add pumpkin, potatoes, water, stock and spices. Simmer for an hour until pumpkin is soft. Season with salt and pepper. Remove from the heat and let cool a little. Blend until smooth. Serve with crusty bread and a bit of grated cheese on top.<\/p>\n<p>Left-overs can be used to pour over pasta (I like it with spinach and ricotta ravioli best) or used to make <a title=\"Pumpkin Lasagne\" href=\"http:\/\/www.jessgramp.net\/recipes\/recipes\/pumpkin-lasagne\/\">pumpkin lasagne<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A spicy and healthy alternative to traditional pumpkin soup.
