I love these vege patties with a full English breakfast or on their own with a bit of tomato or HP sauce. A great way to use up left over veges.<\/p>\n<p><!--more--><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 onion, chopped<\/li>\n<li>potato, mashed<\/li>\n<li>green peas, cooked<\/li>\n<li>other left-over veg (carrots, courgette, brussel sprouts &#8211; anything really)<\/li>\n<li>left over meat (optional)<\/li>\n<li>olive oil and butter<\/li>\n<li>flour<\/li>\n<li>1 egg<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<p>Fry the onion in olive oil and butter. Mix together mash, veg, meat, peas and season with salt and pepper. Add the onion. If the mixture isn&#8217;t holding together very well, beat an egg a little and add this to the mix. Form into balls and coat in flour. Fry in a good amount of butter and oil &#8211; squash flat to form a pattie. Add more oil if you need it. Serve with an English breakfast or on it&#8217;s own with red or brown sauce. Yum!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yum!
