{"id":166,"date":"2011-03-01T20:28:31","date_gmt":"2011-03-01T20:28:31","guid":{"rendered":"http:\/\/www.jessgramp.net\/recipes\/?p=166"},"modified":"2023-02-09T00:34:58","modified_gmt":"2023-02-09T00:34:58","slug":"cottage-pie","status":"publish","type":"post","link":"https:\/\/jessgramp.com\/recipes\/cottage-pie\/","title":{"rendered":"Cottage pie"},"content":{"rendered":"<p>Easy and delicious cottage pie<\/p>\n<p><!--more--><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>olive oil<\/li>\n<li>1 carrot, diced<\/li>\n<li>1 onion, sliced<\/li>\n<li>1 courgette \/ zucchini, diced<\/li>\n<li>1 cup frozen peas<\/li>\n<li>500g mince or quorn<\/li>\n<li>2 tablespoons tomato paste (or tomato sauce if you have this instead)<\/li>\n<li>1 tin tomatoes<\/li>\n<li>Worcestershire sauce<\/li>\n<li>500ml beef stock<\/li>\n<li>mixed herbs<\/li>\n<li>chilli<\/li>\n<li>paprika<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p><em>Mash<\/em><\/p>\n<ul>\n<li>new potatoes, skin on<\/li>\n<li>butter<\/li>\n<li>milk<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<p>Preheat oven to 180 degrees. Fry the onion and carrot until browned and softened. Add the courgette. Lower heat and keep on the heat while you cook the meat in a little oil in a separate, large pot. Once the meat is cooked add the vegetables. Mix in the stock, tomatoes, tomato paste, chilli, herbs and spices. Cook for around anther 1\/2 hour while you cook the potatoes. Once the potatoes are soft, mash with a little butter and milk. Season the meat mix with salt and pepper and pour out into a greased baking tray. Add the mash on top. Bake for 20 minutes or until the top is golden.
