Great for BBQs. This recipe makes enough for a side dish for 4 people.<\/p>\n<p><!--more--><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>3 large potatoes, peeled and diced into small chunks OR<br \/>\nnew potatoes, scrubbed and quartered<\/li>\n<li>1 stick of celery, chopped into small pieces<\/li>\n<li>bacon, 3 rashers<\/li>\n<li>parsley, finely chopped<\/li>\n<li>salt and pepper<\/li>\n<li>egg, boiled and quartered (optional)<\/li>\n<\/ul>\n<p><em> Dressing:<\/em><\/p>\n<ul>\n<li>mayonnaise, 2 tablespoons<\/li>\n<li>seeded mustard, 1 tablespoon<\/li>\n<li>white wine vinegar, 1\/3 cup<\/li>\n<li>olive oil, 1\/4 cup<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<p>Boil potatoes for 10-15 minutes until just done. Fry bacon until crispy and dice into small pieces. When potatoes are just soft, drain and rinse with cold water to stop them over-cooking. Mix together mayonnaise, seeded mustard and vinegar in a salad bowl. Add olive oil and mix well. Add potatoes, celery, bacon,\u00a0 parsley and season with salt and pepper.
