My favourite takeaway at home…
INGREDIENTS

- 6 wholemeal pieces of lebanese bread
- 6 lettuce leaves
- 3 tomatoes, sliced
- 1/2 Spanish onion, sliced
houmous
- 1 1/2 cups cooked chickpeas
- 3 tablespoons tahini paste
- 3 cloves garlic, curshed
- 3 tablespoons lemon juice
- 2 tablespoons water
falafel
- 435g canned chickpeas
- 1 large onion, grated
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 pinch chilli powder
- 1 clove garlic, crushed
- 1/2 teaspoon salt
- 1/2 cup wholemeal flour to coat
- 1 tablespoon olive oil
METHOD
To make falafel rolls, place chickpeas in a food processor and process until roughly chopped. Place chopped chickpeas in a bowl with remaining falafel ingredients, except oil. Mix well.Form tablespoons of mixture into patties. Heat oil in a frypan and cook patties until golden brown.
To make houmous, place all ingredients in blender and blend until smooth.
Spread houmous on lebanese bread. Place 3 falafel, topped with lettuce, tomato and onion, in the centre of the Lebanese bread and roll up the bread.
