INGREDIENTS
- asparagus, chopped into 1 inch pieces
- 1/2 red onion, sliced
- 100g baby spinach leaves
- 500g new potatoes, halved
- Goats Cheese, sliced into small, thin pieces
- walnuts
- radishes, sliced
Dressing
- lemon juice, 2 tablespoons
- seeded mustard, 2 teaspoons
- honey, 2 teaspoons
- olive oil, 1/4 cup
- salt
- pepper
METHOD
Preheat the oven to 180 degrees. Par-boil the new potatoes for 15 minutes. For the last 7 minutes add the asparagus spears in a steamer on top. In a small bowl mix together the lemon juice, honey, mustard, seasoning. Once well mixed, add the olive oil. Drain and place the parboiled potatoes into a dish. Sprinkle half the dressing over the potatoes and bake in the oven fir 25 minutes or until golden brown. Towards the end of the cooking time add the walnuts and roast for around 4 minutes but be careful not to burn them.
Wash and drain the spinach and place it at the bottom of a large salad bowl and prepare the rest of the ingredients. Scatter the red onion over the top of the spinach. Once the potatoes are done add them next to the bowl. Place the goat’s cheese on top, where it will melt slightly. Next, add the asparagus. Then sprinkle the walnuts and radishes on top. Season with salt and pepper.
