I bought some marzipan for Christmas this year and made these marzipan cookies.

INGREDIENTS

  • 1 cup flour
  • 200g marzipan
  • 1 egg white
  • 2 teaspoons cinnamon
  • 2 tablespoons Amaretto – Disaronno etc.
  • 1 pinch salt
  • 1 egg yolk, for topping the biscuits

METHOD

Preheat the oven to 180 degrees.

Crumble the marzipan into a bowl. Add the flour, salt and cinnamon. Separate the egg and keep the egg yolk to the side. Add the egg white and beat it lightly in a small bowl with a fork. Add the egg white to the mix with the Disaronno. Mix well with a spoon and your hands until it forms a dough.

Roll the dough flat and use a small glass or cookie cutter to cut out biscuits. Place on a greased tray. Top with the egg yolk wash.

Bake for 15 minutes or until cooked through. The cookies will be a bit gooey in texture due to the marzipan.
